Smoked Leg of Lamb has become a staple in our household! Simple, easy to manage, and mind-blowingly delicious.
COOK TIME: 2.5-3 hours

INGREDIENTS
- 1 package Boneless Whole Leg
- 2 tbsp olive oil
- Seasoning rub of your choice (Alternatively, we recommend a mixture of salt, pepper, rosemary, thyme, and garlic)
- Basting Liquid (We have tried this recipe using light beer and a honey/water mixture - both were successful in creating a delicious end product!)
DIRECTIONS
1. Preheat your smoker to 275F
2. Unpackage and pat-dry the lamb. Score with knife. Cover with olive oil, then with your seasoning rub.
3. Place leg directly on the grate in your smoker
4. After 45 minutes, baste the lamb (with your chosen fluid) to keep moist. Repeat this every 30 minutes until done.
5. Remove from the smoker when the internal temp reaches 135 degrees. Approximately 2.5 hours for a 5 lb boneless leg.
6. Carve and serve!
**Recipe Notes
1. This recipe can be done with a Bone-in Leg, however cook time will be longer
2. Think of your smoker (especially pellet grills) as an outdoor oven. This recipe can also be done in an indoor oven, but because the roast will need to be in a pan, rather than directly on the grate, cook time will be longer.
