Sous Vide has become our favorite way to prepare Rack of Lamb! Try our time-tested method for cooking the perfect rack every time.
COOK TIME: 4-5 hours

INGREDIENTS
- 1 package Boise River Lamb Rack of Lamb
- Seasoning blend (We used Idaho Spice Company's Za'atar Mediterranean Seasoning and El Gaucho - Chimichurri Seasoning)
DIRECTIONS
1. Preheat your sous vide to 132F
2. Unpackage and pat-dry the lamb. Score with knife. Apply seasoning blend.
3. Place the seasoned Rack into a vacuum seal bag and seal
4. Place the vacuum-sealed rack into your sous vide cooking container for 4 hours
5. After 4 hours, remove the rack and preheat a pan on your stovetop
6. Reverse-sear the rack on your stovetop until the internal temperature reaches 135F.
7. Cut and Serve!
